Meet the bakers!
Patrick is originally from Limerick, Ireland. He grew up there, making regular bakery visits with his father every Saturday morning. Black forest cake, vanilla cream buns, and sliced white bread with a black top crust were the favorites (when we say black crust, we mean BLACK crust). He also lived on mini-baguettes that could be purchased at the entrance of grocery stores, still warm and soft, picking out the middle to eat while leaving the remainder as an empty shell of crust.
Ironically, he now thinks the crust is the best part of the bread. All of this is to say, that Patrick was going to be found in a kitchen baking something, one way or another. What began as a small venture to make a little money while satisfying a hobby, has grown into a full-time job for him, making 6 types of pastry and 8 types of bread. He wouldn't trade it for anything.
